Prawn pasta with a saffron sauce

Serves 4

400 grams spaghetti

400 grams raw green prawns, peeled, deveined, tails on.

2 cloves garlic, crushed

4 sprigs parsley, chopped

1 Birdseye chilli chopped

50grams butter

50ml olive oil

4-5 saffron threads


  1. Place a large pot of water on to boil, add 1tb salt to the water. Place pasta into water, stir immediately until water comes back to the boil. Cook as per packet instructions.
  2. In a medium fry pan place butter, turn onto a medium heat and allow to become a lightly browned, add garlic and turn heat to low, allow garlic to cook for 2-3 minutes, garlic should become soft, add olive oil, saffron, chilli turn to a medium heat, add prawns sprinkle with salt and pepper, toss every 3-4 minutes.
  3. Drain pasta, place into fry pan, add parsley, and toss pasta sauce through to coat.
  4. Serve immediately
